My Recipe for Steak Fajitas & Dip

I totally forgot to blog about my last 2 weeks ago on Steak Fajitas and Yogurt Dip recipe! I whipped up a simple meal with tortilla wraps for dinner. It’s relatively healthy and delicious except that I overcooked my lamb a little. Below are some of the photos I shot while cooking… (just in case if you didn’t know what Dill or mint looks like!!)

RECIPE FOR YOGURT DIP!

Ingredients:

  • 1-1/2 cups Yogurt
  • 3 Tbsp. chopped fresh dill
  • 2 Tbsp. chopped fresh mint
  • 1 Tbsp. lemon juice
  • 1 to 2 cloves garlic, minced
  • Salt and cracked black pepper
  • Fresh dill sprigs
  • Assorted vegetables! (e.g. radish, carrots, tomatoes)
  • Directions:
    In bowl, stir together yogurt, dill, mint, chives, juice, garlic, and salt. Let stand 15 minutes or refrigerate up to 12 hours. Season with salt and black pepper. Top with dill sprig. Serve with assorted vegetables. Cover and refrigerate leftovers; stir well before serving.

RECIPE FOR STEAK FAJITAS!

Ingredients:

  • 2 12-ounce skirt steaks, each halved
  • 3 tablespoons fresh lime juice, divided
  • 1 large onion, halved lengthwise, thinly sliced
  • 4 large garlic cloves, pressed
  • 1 tablespoon ground cumin
  • 1 teaspoon finely grated lime peel
  • 2 tablespoons olive oil
  • 12 cherry tomatoes
  • warm flour or corn tortillas

Preparation:

  • Arrange steaks in 13x9x2-inch glass baking dish; sprinkle with salt and pepper. Combine 2 tablespoons lime juice and next 5 ingredients in medium bowl. Pour onion mixture over steaks; turn to coat evenly. Let marinate 10 minutes.
  • Heat oil in large nonstick skillet over high heat. Add steaks with onion mixture. Cook steaks 1 minute per side. Add tomatoes and basil. Continue cooking steaks to desired doneness, turning occasionally, about 3 minutes longer for medium-rare. Sprinkle mixture with 1 tablespoon lime juice. Cook 1 minute longer to blend flavors. Transfer steaks to work surface. Cut across grain on slight diagonal into 1/2-inch-thick strips. Transfer fajitas to bowl and serve with tortillas.

I would give myself a rating of 6/10 for this recipe cause I under seasoned the beef a little. However, the yogurt dip was surprisingly easy to eat considering it’s a healthy dish. I would definitely cook this again with more seasonings especially with the cumin powder and lemon juice! *yumz*

DO YOU LOVE SPAM!

HOW CAN YOU NOT LOVE SPAM!?

No no.. not the SPAM EMAILS! SPAM!! SPAM MEAT! Otherwise known as Luncheon Meat for porky lovers. Honestly, I don’t remember eating SPAM brands but white folks like to eat it. My mom told me we use to eat SPAM a lot in Australia cause it was cheap. Being the only Chinese family in the neighbourhood during the 80’s, we hardly went out to eat, nobody invited us to eat (but they only invited ang mo to eat in their house) and fish and chips was getting boring. So SPAM came in handy and cheap.

Anyway, to cut the story short! I don’t remember eating SPAM in Aussie cause I was too young to remember anything except for those racist pricks! I wanted to try how SPAM taste like so I bought SPAM with Cheese cause I like Cheese and I like our local Luncheon Meat!

It was not only crazily expensive, RM12 for a tin of porkilicious meat… it looked funny and smelled really porky! Like they just butchered the pig and stuffed him inside the tin with all the blood and guts still dripping *gruesome mate*. Yep… I was quite reluctant to try but cooked it anyway! It’s RM12 okay… that’s 2 days worth of lunch money!

The smell was RIGHT ON FROM THE START! Not only the porky SPAM was fugging salty, may be cause of the CHEESE but it smelled down right butchered pig in a tin! Let me say it again….

SPAM TASTE LIKE BUTCHERED PIG IN A TIN!

Now, I don’t recall smelling our local luncheon meat like that. Our local luncheon meat was porky smellish but it wasn’t like super bad. May be SPAM used high quality meat to make you taste the real porkiness in your mouth!! YUMMMMMMEHHHH………

FREE BEER?

 

Now! That’s a fucking good marketing gimmick!

Don’t get me WRONG as they are giving out FREE BEERS! So long you mention the word “FREE” and “BEER”, well any Malaysian would love a FREE BEER! That’s called Kiasu! Get Free Beer (NOTE TO YOURSELF: FREE BEER NOT BEERS!), 1 bottle per person at Asian Cafe on 12th August 2010.

Again… one beer is not enough? Order another one and pay for it! That’s called a fucking good marketing gimmick! So free beer ‘s’ anyone?

The big hype over macarons is definitely overrated but nonetheless they are good to eat! I’ve always wanted to try macarons but never got around it until last week. It’s like soft biscuit with fillings in between! It’s really from an old traditional Chinese recipe… REALLY! REALLY!

If you tried Chinese rice cakes (baked softly) with no fillings of course! Yes, it’s just the outer part of the macaron but thicker and fluffier.. that’s what it reminded me off when I ate the macarons! Weird huh? And they say it derived from the FRENCH!? They should try our Chinese Rice Cakes & compare :P

Cooking Recipe (Thai)

 

THAI SEAFOOD GLASS NOODLE SALAD
I like to cook but I’m very lazy. If only I’m a full time housewife, I’ll whip up every dish in the book!
I made yummy (tasted yummy to me) thai seafood glass noodle salad for lunch! Need to add more lemon juice and coriander next time :( I want to cook more! SIGHS!

How to prep:
Glass Noodles + Prawns + Squids + Coriander + 1 Lemongrass + 2 Lemons + 1 Garlic + 1 Onion + 2 Tomatoes + Fish Sauce + Soy Sauce + Chilli padi

Boil Glass Noodles. Drain. Let it cool.
Cut lemon grass into thin slices and dump it in hot boiling water together with the prawns and squids (or whatever seafood you want!) Boil 5 minutes. Drain everything and keep seafood and lemon grass aside to cool.
To make dressing. Squeeze 2 lemons in a big bowl. Chop garlic, onions & coriander. Mince chilli padi. Mix these ingredients in the big bowl of squeezed lemons! Add fish sauce and soy sauce in the big bowl. Mix Mix Mix.
Add the seafood, lemon grass and glass noodles in the big bowl.
Mix Mix Mix.
Test, not salty? Add more soy sauce. Not sour? Add more lemons!

The only thing I didn’t like about Concorde Hotel is their super expensive food! So we packed Hard Rock Cafe Jumbo Cumbo back to our room! Love the chicken wings…

Concorde Hotel Malaysia Concorde Executive rooms are at RM310++ per night with 2 complimentary breakfasts. I would definitely go back there again!! Luving it :)

The next day, we had dinner in TEEQ restaurant in Lot10 rooftop with family and close friends. I’ve never been there before so I was a bit jakun there. There was not much food to choose from!
